And where they will be processed for filing.

Step 3

Think about how to serve your food. Usually, when making a buffet, they choose one of three ways. The first - "on the table" - implies that at the time of arrival of guests all snacks and drinks have already been laid out. In other words, full self-service. The second method - "by-pass" - involves laying out fruits, and the rest is taken out by waiters from the technical area, fenced off by a screen or curtain. Guests communicate, service staff pass by them with plates on which snacks or drinks are laid out. The third option is combined. For large buffets, the latter is most preferable.

Step 4

Make a menu. Remember that these should be cold or hot snacks literally "for one bite." Warn the catering company so that you can eat them with your hands, as an option - take care of the presence of buffet (small) spoons and forks in advance. A wide variety of dishes is expected only from serious events, a small buffet table allows 3-4 types of canapes, 6-8 vegetable snacks, small-piece pastries and cakes - petit fours.

Deal with alcohol and soft drinks. Most often, when making a buffet table, they stop at two types of wine - red and white, 2-3 types of juice and mineral water. But you can make tea or coffee. Again, it all depends on the purpose of the event, its mass scale and the technical capabilities of the premises.
